Welcoming Beer Maine Spring India Pale Ale: Spring is Maine Beer’s take on an American IPA
tailored for days when we start looking forward to warmer weather. They blend iconic American hops with
new varietals

Roasted vegetable salad with a Dijon- shallot vinaigrette, roasted sweet potatoes, goat cheese, fresh kale
and toasted pumpkin seeds
Course One Ommegang Bourbon Barrel Aged Smoked Vanilla Porter: During the summer of
2017, our brewers were developing, and subsequently falling in love with, our Ommegang Smoked
Porter. Sampling the first pilot batches, it was clear that this was a beer that was meant for barrel
ageing. Thus, when we brewed Smoked Porter to release in the winter of 2017, we also set some
aside in bourbon barrels. Each individual barrel then received additions of several whole Madagascar
vanilla beans to impart their rich and creamy flavors into the beer as it aged. Now, six months later, it
is ready to drink. This is one of Ommegang’s most limited releases to date
Assorted Cheeses : Humboldt Fog, Cabot Clothbound cheddar and Beemster’s Dutch Gouda served with
assorted jams
Course Two Chimay Grande Réserve: This is a beer whose fragrance of fresh yeast with a
light, flowery rosy touch is especially pleasant. Its flavor only accentuates the pleasant sensations
perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented
Trappist beer, refermented in the bottle, is not pasteurised.
Hanger steak with Bagna Cauda pan sauce and double stuffed baked potato and roasted stuffed tomatos
Dessert Wicked Weed Chocolate Covered Black Angel: Chocolate-covered black angel is a
dark, sour ale that we combine with 2 pounds per gallon of tart Montmorency cherries. After the beer rests
in Kentucky bourbon barrels, we then blend it into steel tanks with another 2 pounds per gallon of
Montmorency cherries and 100 pounds of Honduran cacao nibs from French Broad Chocolates. Give in to
the darkness.
Adulterated berry compote (Mandarin Napoleon) surrounded with assorted specialty chocolates.
