The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. \r\n\r\nThis blended base was transferred onto the spent fruit (tayberries) and lees from our previous batch of Spectral Lore. We refermented this with a further 200g\/l locally grown Scottish strawberries from 2023 harvest. All fruit was sourced from farms located within 30 miles of the brewery. Only a few breweries have preserved the beer style, and it has been experiencing a renaissance for around 30 years.\r\n\r\nWe use a very special smoked malt for our Aecht Schlenkerla Erle black beer. This is not dried over a beech wood fire as usual, but over an alder wood fire.
