Spontaneously fermented and terroir-driven cherry mead made with Stevnsbær.
No added water or yeast (solely fermented from the yeast and bacteria naturally present on the cherries).
Due to both the nature of spontaneous fermentations and the use of a variety of vinification methods going into the final blend, this release will show a bigger range of differences between the vintages than many of our other releases. Definitely a product made for verticals!

Local cherries with local wildflower honey as the only ingredients. The product was made in multiple small batches, produced with different techniques, and later blended together in well-thought-out ratios based on taste, getting the best out of all the "band players":
For this vintage, the main blending thread went through a normal spontaneous maceration with 11 days of skin contact, before only the free-run juice was collected (no pressing). This was blended with two other smaller threads, an extended macerated- and oaked thread (60 days skin contact), and a semi-carbonic macerated thread. To respectively add a deeper structure of tannins and complexity, and a very vibrant, fresh and perfumy cherry character.

This vintage has a deeper tannin structure than the 2021-release, feeling more dense and concentrated, while still keeping a fresh cherry flavor throughout. Read Less
