Dusty rose petals, salami rind, squashed overripe strawberries growing mould. Amazing carbonation, still some fruit somehow, bloody, yeasty and rounded. Acid is good, surprisingly fresh. Clearly over the hill but aged gracefully. Blessed to try this!

This is great. Deep lemon sherbet yeasty nose. Little volatile kick on the nose. Great mineral length to this, the champagne really comes through. Delicate softness but beautifully integrated volatile acidity lifts. Fave of the day

Stone fruits, apricot. The oxidised sherry notes are so subtle.. surprising giving the intensity of manzanilla. Understated smooth acidity. Can’t see this improving

Cherry drops, almond, cinnamon. Deep mellow long acid. Fruit intensity seems to have faded. Between aged and funky and young and fruity..

Pops pretty carby. Little volatile kick on the nose. Some lemon. A lot of dust. Nice density. Some toffee coming through, little green apple. Mainly an acid and barrel-y finish though. Again, dusty. Pretty light and ultimately not as complex as I’d hope.
