Probably don't need a lambic basket for this, but I'm using it anyway. Definitely get that candi sugar/plummy sweetness and yeast.

Brian Hewitt: As it warms I'm getting a little funk, the adverted pepper and a touch of funk in the finish. Improving as I drink.
