Gavin Baxter: Side note, this does get better warmer.

The front says IPA the back says westie, which is fine but this isn't west enough, mid-west maybe.Grassy and sweet on the nose. Properly coat's the mouth, savoury with a lovely hint of passion fruit on the back. There is bitterness but not enough.

I'm being super critical because I hold Beak to a high standard. It's clean, crisp some orange and pine vibes coming through. Sadly there is zero head retention. It's easy to drink but I feel that comes from wanting more from it. It does hide the 6.4%.

This is how you do single hop beers. On the nose soft floral, rose pellets almost. Soft pillowy body, citrus, floral and some candy floss vibes. Such a punchy single hop beer that's super drinkable and really showcases what Mosaic can do.

If you're being honest with yourself. It's green, good body and mouthfeel but i suspect this to evolve and get even better. I would suggest holding back on the excitement and drink this in a few weeks. Looking forward to trying it on keg

Why peach? Just such a watery fruit in the first place and can be such an aesthetic taste most of the time. To have it as the many flavour profile of a beer for me doesn't work. And with a pilsner which is a light style anyway, that's just hard to do.
