Kölsching My Dreams begins as a traditional Kölsch: German Pilsner malts and Mittelfrüh hops for bitterness. Then a left turn. Milk Sugar is added for a characteristic creaminess and a proprietary orange peel, vanilla bean, and Mosaic hop schedule is followed in the whirlpool and fermentation. Mosaic hops add a crushed fruit nose and citrus bite.

"Blood of the fruit is thicker than the honey of the orange blossom." The Old Testament proverb is oft shortened: Blood is Thicker than Honey. Huh? Of course that's not the proverb. The true proverb reflects on the kinship born of blood in battle being greater than the water of the womb.          

Blood is Thicker than Honey is brewed with a balanced bill of US Pale Malt, Red Wheat Malt, Honey Malt, and Orange Blossom Honey. The zest and freshly squeezed juice of eight Blood Oranges is added in the whirlpool. Mandarina Barvaria lends its characteristic citrus nose. The result: a cloudy Wiessbier in a distinctly Thirsty Stone style. Read Less

Bananenbrot is a traditional German Dunkelsweissbier brewed specifically to highlight the banana-like esters and phenols of the Weihenstephan Weizen yeast used in the fermentation.

The fermentation was performed at the top end of the yeast’s fermentation temperature range to induce the banana-like characteristics and a ripe banana added to the mash for a sugar lift. The grain bill provides the malt for a bread-forward palate in the traditional style of a Dunklesweissbier.

Bake a Banana Bread and cut a thick slice. Pour a pint of Bananenbrot for an anytime of the day pairing, not just dessert. Read Less

The RVA cultured yeast imparts a light body and subtle fruit and spice nose. Pour 2/3s into a tall wheat beer glass, swirl the last third to lift the yeast from the bottom of the bottle and pour into the glass. Serve with an orange or lemon slice. Read Less

Auld Lang Syne, “for the sake of old times,” is brewed using a recipe fashioned after Dogfish Head’s Sah’tea Ancient Ale that is based on a 9th Century Finnish Ale recipe.

A grain bill of Pilsner, Rye, Vienna, and others is spiked with Lemongrass, Juniper Berries, and Willamette Hops. The resulting wort is lightly hopped and at the end a Chai blend of black tea, ginger, cinnamon, cardamon, clove, nutmeg, black pepper, and rosemary is added to steep before transfer to the fermenter. The result is a seasonal ale with a spicy palette enjoyed cold or warm.

Gather in the hall and raise a pint to toast the last year and the year to come. Read Less
