This cider displays a perfect balance of handpicked Adelaide Hills apples co- fermented with Queensland mango & pineapple. Carefully crafted to display qualities of a traditional ‘sour’ with apple sweetness on the back palate, reinforced by the depth of tropical flavours that only fresh Queensland pineapples and mangoes can deliver.
The apples provide great structure and a solid acid backbone. The introduction of pineapple and mango lush out this cider with great mouthful, depth and a tropical complexity.

Careful selection of both hops and apples was paramount to this Hop Edition release. After a few trials we found the perfect blend to champion the powerful citrus and grapefruit aromatics from the Riwaka hops with our signature clean apple flavour.
Extra Jonathan apples from early in the season allows lots
of crisp apple flavours, which are further enhanced by the pineapple and tropical fruit of the El Dorado Hops. The Idaho 7 hops gives us subtle herbal/black tea notes, which helped to round out and balance the fruit forward palate.

This is our ode to a Solera System.
We have selected parcels from some of our best batches of cider over the last 4 years and set them aside in oak barrels to co-mingle and age gracefully on yeast lees.

This product is a cider that has been many crushes in the making. Through our custom crafted Solera we have been adding cider, freshly crushed and filtered through straw, to the system. This then sits on solids and lees with agitation monthly to promote the yeast to impart nuttiness and complexity.

This product is unfiltered, so it will be cloudy and full-bodied.
As it is a Solera it will show a balance of characteristics of both fresh and aged cider.
The resulting cider shows bready and nutty notes from the lees integration, while hints o Read Less

The Organic is a cider that has been many crushes in the making. Through our custom crafted solar we have been adding cider, freshly crushed and filtered through straw, to the system. This then sits on solids and lees with agitation monthly to promote the yeast to impart nuttiness and complexity. This product is unfiltered, so will be cloudy and full-bodied. As it is a solar it will show a balance of characteristics of both fresh and aged cider.

Most interesting of all is the balance between the aged characteristics of old batches when paired with the freshness of more youthful material.
