Here at Tap It Brewing we take a unique approach toward crafting an India Pale Ale and challenge the current status quo. The goal? To craft an India Pale Ale hoppy in flavor and aroma that goes down smooth.

Fragrances of tangerine and grapefruit entice the nose. A thick hazy rich head leads drinkers toward an experience rich in citrus and earthy flavors ending with a smooth, sticky finish. The complex floral and citrusy tones from Citra and Simcoe hops welcome you, while two more hop varietals mate smoothly with four malt varieties for an unmatched aroma. Altogether, a crisp pleasurable full bodied taste.

S.N.A.F.U is a Double IPA, AKA DIPA, heavily hopped and high in alcohol. To pack in as much hop character as possible, we hopped it in the mash ton, first wort, bittering addition, flavor addition, whirlpool (aroma), and dry hops in fermenter. With the 6 combined hop additions and 5 distinctive varieties of hops, this Double IPA is a hop head masterpiece at over 100+ I.B.U’s. The Malt profile was kept relatively simple to keep the hop character predominate yet not overwhelming. Every hop used was a US variety with exception of German Mandarina Bavaria which is an aromatic hop with strong notes of tangerine and citrus that was released in 2012 and is a pedigree of the famous Cascade hop. All in all, this is a Double IPA that truly backs up its name: Situation Normal All F**Ked Up. Read Less

Café Noir is an imperial Coffee Porter that has been barrel-aged for 8 months in Pinot Noir barrels from the California Central Coast. It is then cold infused with a blend of locally roasted coffee that was hand-selected by Tap It's brewing team and added just before bottling for the freshest of coffee flavors. We fermented this whack job of a beer at a slightly higher temperature to lend the warmth and mouthfeel of a Hot Toddy. With the seasonal temperature changes of the 8 months of barrel aging, we believe this Imperial Porter gained the nuances of an Old Ale in some of its malt character and body. Read Less

We took an unconventional approach to souring this particular brew. First, we mashed in and collected the sweet wort before moving it to the kettle to be brought to a boil. From there, we added lactobacillus and let it sour for 2 days (a drop from 5.4 pH to3.7 pH). After souring, we transferred it back to the kettle for boil to kill the lactobacillus and to get the hopping of an American IPA. Lactobacillus is inhibited by the preservative quality in hops completely if IBU is above 34. This is why we soured it prior to hopping. Souring with lactobacillus brings out the hop flavor in this IPA and makes it pop. This unusual approach makes for a different, yet enjoyable flavor profile. Read Less
