Our award-winning Classic Saison is a rustic Farmhouse Ale that expresses a sense of place, time & season. We Open-ferment this Farmhouse Ale which allows airborne indigenous wild yeast & bacteria to partake in the fermentation. After allowing the Saison to naturally ferment at its own pace, we then take it strictly to French oak barriques where it undergoes a secondary slower fermentation and maturation where the complex flavours & sourness aspects develop. This artisan ale is then blended to taste from various barrels in our House style and is 100% bottle re-fermented for up to 3 months for a Champagne-like finish.

In conjunction to this, we fermented it with fresh organic Hibiscus whole flowers & rose petals grown in the iconic Byron Bay region of Australia that gives this beer a lively refreshment with a sense of place & season.

Barrel Aged Wild Ale with Chardonnay - Cuvée De Bois started life out as our Cuvée which began as an open fermented Farmhouse Ale made in our house style, that was co-fermented with Victorian "free run" Chardonnay and left to naturally sour for an extended period. Cuvée evolved to become Cuvée De Bois when we felt the finished beer needed some oude (old) Saison and French oak characters to mellow out the vibrancy of the chardonnay free run and give this ale some length. So to the young fermented beer, we blended 2 x selected barriques of 2013 & 2014 Saison that had been barrel fermented and aged on chardonnay lees a modern day ‘Bière De Coupage’ technique where young and old beer is blended. Cuvée De Bois was laid on it's side to mature and naturally carbonate using indigenous flora for the last 8 months. Read Less

This Farmhouse IPA very much contributes to the existing IPA landscape in a wonderful way and has all the hallmarks of what you would expect from a modern-day IPA. A generous malt bill using 100% Victorian malts makes up the base which is then liberally hopped with the freshest hops we could get our hands on to really highlight that this Farmhouse Ale is all about the New World hops. Of course the engine room of this Ale is still our house yeast that is recognisable as it is complimentary to the malt & hop profile.

Expect over ripe mango and peach aromatics to dominate on opening a can which then gives way to the toasty malt characters and rich body that finishes dry yet delicious. Read Less

This beer is deep gold in colour and displays a soft malt backbone coupled with a layered complexity which is rounded off with a dry prickly finish.
