Consecration is a Dark Ale aged in Cabernet Sauvignon barrels from local wineries. It is aged for 8-12 months with currants, Brettanomyces, Lactobacillus, and Pediococcus. Consecration is one of our Lambic-style beers. We ferment the base beer for Consecration in stainless steel and after fermentation, it is transferred to the barrels with the fruit and Brettanomyces (added at the same time). Two to three months into barrel-aging, the souring bacteria is added. At Russian River, both Pediococcus and Lactobacillus bacteria are used in most of the barrel-aged sour beers.

Pliny the Younger is a Triple IPA, simply meaning that it is higher in alcohol and has tons of hops. The alcohol usually finishes at about 10.25%, although it is remarkably dry for the amount of malt used in this recipe. It is loaded with hop flavors, bitterness, and aromatics. We brewed Younger for the first time in 2005 as a winter seasonal beer, building upon the Pliny the Elder recipe while pushing the envelope with malt, hops, and alcohol just to see how far we could go! Each year we slightly change up the hops based on the cream of the hop crop selected from the prior year’s vintage. But the base recipe stays nearly exactly the same. Read Less

Rosa! Their brewery went out of business in the 1960s, but we wanted to resurrect “Happy” (the hop on the logo) and create a new fun beer for him to enjoy! It is also a way for us to pay homage to the Grace Family and their beer pioneering history. Happy Hops is an incredibly hoppy India Pale Ale with an immense hop aroma and flavor and a mild bitterness.

Intense citrus flavor and aroma with pronounced grapefruit characteristics. Mildly bitter with aromas of blueberry, mango, and other tropical fruits. The hop-forward character of this beer type is often referred to as “juicy.” Read Less

STS Pils is a classic German-style pilsner but with a Russian River twist, this is because we dry hop this beer with a small amount of European hops. It is straw in color and will often have a slight haze due to the fact that there is a small amount of yeast left in the beer. This beer is hop-forward with a firm malt foundation, strong lager yeast characteristic, and a dry, bitter finish. It is often said that Pilsner is a study in purity, simplicity, and cleanliness of flavor. It should also be noted that water can make the difference between a good beer and a great beer when adjusted properly. We use a distinct water profile for STS Pils, which contributes to the crisp minerality in the finish.

A truly great Pilsner is a difficult beer to perfect, as its light crisp flavor profile leaves little room for error. Modern brewing techniques (such as open-top fermentation) and old-world traditions create the distinct qualities in STS Pils. Read Less

Mind Circus IPA has a mild bitterness and a thick, luscious mouthfeel. This style of IPA is what is being called in the beer world a “Hazy IPA” Dominantly herbaceous and grassy, with moderate tropical notes as well as some bright citrus. This unique hazy IPA gains its flavor of grapes and grass from the Nelson hops, and its tropical notes of pineapple and mango from the Strata hops. It is unfiltered leaving a “haze” and some yeast for more texture. Oats were also used to add to the softer mouthfeel and hazy appearance. Read Less

Redemption was inspired by the Belgian Single or Blonde Ales. It has a fruity, banana bouquet with a spicy, mild finish. The yeast used in Redemption gives it a strong banana flavor and aroma. Our grain build for Redemption is 2-row, pilsner malt and a ‘smidge’ of wheat. Celeia (our go-to hop for our Belgian beers) and Saaz are the hops used in Redemption. Redemption is similar to Damnation in that they both use the Belgian yeast strain, but Redemption is fermented at a colder temperature, which softens the Belgian yeast profile (clove and banana). Pliny the Elder was one of the first commercially brewed Double IPAs created by Vinnie in 1999 while the brewery was still owned by Korbel Winery. In 2020, we brewed Pliny for President by taking the original recipe and adding a 2 step double dry-hop (DDH) process. This beer was a huge hit with not only beer enthusiasts but the entire RRBC crew! So we decided to bring it back in 2021 with DDH Pliny the Elder. The original Pliny and DDH Pliny both have the same hop bill, while the amount of dry hops is roughly doubled in the DDH Pliny. The original Pliny is dry-hopped on day 7 with about 2 pounds per barrel, and DDH Pliny is dry-hopped on day 1 and again on day 6 for a total of about 4 pounds per barrel. This double dry-hopping process adds even more flavor, complexity, hop aroma, and freshness to the beer. Read Less

The lightness of this style generally makes it challenging to brew, as any potential flaws will be easily detectable.

This is the fifth election season that we have made Defenestration, however, this time around Vinnie completely revamped the recipe, including a change in the malt and hop bill, as well as the yeast. The beer is hoppier, more bitter, and has a larger malt foundation along with the use of Kveik
yeast for the primary fermentation, which adds even more interesting flavor & aromatic character. At packaging, the beer is dosed with some sugar and fresh Saccharomyces and Brettanomyces (Brett) yeast for bottle and keg conditioning. From there it ages for several months before it is ready to enjoy.

The beer is quite distinctive with a clean malt character and the hops contributing notes of herbal, spice, floral, and stone fruit. The unique Kveik yeast contributes notes of citrus, which is very unique for yeast. (Yeast traditionally contributes fruity, spicy, or earthy flavors to a beer). Very dry, bitter, hoppy and medium-bodied. Read Less
