We adore the rich tannin content of these local black currants, and using the native yeast which the peels carry from High Goose Farm allows us to introduce a fantastic, light-but-funky Brett profile to support the fruit. There’s also a wonderful tangy flavor that only comes from time, love, and old Belgian secrets. Be careful though!
