la prima birra brassata a Borgorose continua ad essere una delle più amate. Ispirata alle tradizionali India Pale Ale Inglesi ( birre dall' abbondante luppolatura per affrontare i lunghi viaggi dalla madre patria alle colonie Indiane) ha un profumo intenso dato dai luppoli aromatici Americani. Ambrata con riflessi vivi e dotata di buon corpo, al naso offre affascinanti note agrumate e pepate. La gasatura è bassa, come da tradizione delle birre d'Oltremanica. L'assaggio regala un percorso avvincente che conduce verso l'amaro finale, intenso e persistente.

Borgorose is still the most loved and
appreciated.
Inspired by traditional British India
Pale Ales (beers that were abundantly
hopped in order to preserve during the
long trip towards the colonies in India)
it has intense aromas given by American
aromatic hops.
Amber in color, it has a medium body, the
aromas are clearly of citrus fruits and
peppery.
Carbonation is slightly low as traditional
to its style.
The mouthfeel leads to a persistent
and intense bitterness.

Una delle poche incursioni nel mondo della bassa fermentazione made in Borgorose. Luppoli Europei e luppoli Americani per un Dry hopping con Simcoe, Warrior e Saaz. Più alcolica e corposa rispetto alle classiche Pils, sorprende per la sua intensità rivelandosi esplosiva ma equilibrata. Una bionda "tosta" di cui vi innamorerete, proprio come la protagonista del romanzo di Willa Cather da cui prende il nome.

Diverse varietà vengono aggiunte tutte negli ultimi dieci minuti di bollitura, in dose 3 volte superiore rispetto alla ReAle. Il risultato è un esplosione di profumi che vanno dall'agrumato al resinoso (pino e incenso). Al primo sorso le papille gustative sono piacevolmente investite da una poderosa sensazione d'amaro che lascia il passo ad una gradevolissima e persistente nota di mandarino. Attento, crea assuefazione!

Lasciatevi conquistare dalla Duchessa, la nostra birra al farro, prodotto tipico del territorio. Prendendo ispirazione dalle classiche Saison Belghe, conquista con la sua piacevolezza e la sua fresca eleganza. La schiuma abbondante e pannosa libera aromi fruttati( banana, ananas, frutta tropicale) e floreali riavviati dal leggero e piacevole pepato. La gasatura fine, la leggere acidità e una luppolatura moderata la rendono una birra fresca, mai stucchevole, piacevole dall'inizio alla fine.

È prodotta utilizzando Grano Senatore Cappelli per donarle intensità e morbidezza e Scorze D’Arancia per renderla incredibilmente fresca.
È una birra dal colore dorato brillante e una schiuma invitante. Al naso sono fragranti e intense le note di cereale e crosta di pane, in bocca è elegante ma decisa. Il malto delicato, il corpo snello e la gasatura sottile giocano in fantastico equilibrio, per chiudere con un finale pulito che invita ad un secondo sorso.

La luppolatura decisa di scuola Inglese si sposa alla perfezione con le note fruttate e floreali di grande fascino, intensità e complessità sviluppate dalla selezione di lieviti. La Maledetta è infatti una birra che sperimenta una speciale miscela di lieviti ottenuta dall' interazione di tradizionali lieviti da birra con quelli selvatici "cacciati" nelle mntagne intorno al birrificio, isolati ed "addomesticati" per creare un nuovo ceppo specifico del territorio. In bocca , dopo l'ingresso mielato, arriva il caramello che evolve nell'agrumato e va a fondersi con una piacevole nota amara e speziata.Birra del Borgo didica questa birra al sigaro Toscano e al club maledetto Toscano.

Speziata con uvetta e scorze d’arancia, al naso si rivela con note calde ed avvolgenti con sentori di frutta secca, agrumi ed un leggero mielato. In bocca i sentori iniziali di caramello e miele di castagno lasciano subito il posto al fruttato di ciliegia e ribes, con un piacevole amaro finale.

La birra di partenza è una classica Porter a cui vengono aggiunte foglie di tabacco kentucky Toscano, quello utilizzato per i celebri sigari nazionali. Il risultato è una birra scurissima, nera, impenetrabile, con un naso molto ricco, che offre sensazioni di tostature, tabacco, speziato e mallo di noce. In bocca ritroviamo le note tostate, con una leggera acidità e il tabacco che regala toni pepati quasi piccanti. molto ampia, lunga, complessa, specie rispetto al basso grado alcolico.

Una Belgian Ale che incontra il carattere italiano dei lieviti selvatici cacciati e addomesticati sui Monti della Duchessa. Tra note floreali, fragranze di biscotto, caramello e fiocchi d’avena nasce una birra intensa e ispirata al territorio.

Andiamo nella campagna nostrana con Birra del Borgo! I birrai hanno rivisitato una Belgian Amber Ale con un tocco di lievito selvatico per avere ancora più carattere.

Trattandosi di una Amber Ale, non ti sorprenderà il colore... ambrato di TrapYeast! Ma concentriamoci sul ricco bouquet. Le note dolci del malto si percepiscono subito, accompagnate da aromi di pane e miele leggero mescolati con tocchi più caramellati. Note floreali e speziate vengono aggiunte per dare un'impressione di pan di zenzero. Riconosci il lievito selvatico? Si fa sentire attraverso aromi di cuoio molto leggeri, che donano un po' di contrasto.

TrapYeast è una birra molto piacevole da bere, con il suo corpo morbido e una leggera acidità portata dal lievito selvatico. Potrai assaporare il lato caramellato tipico di una Amber Ale; non c'è traccia di amarezza, ma piuttosto di un carattere speziato. Le note coriacee del lievito rendono i sapori più complessi, ed il miele ritorna nel finale con una buona dolcezza.

Italiano: Ispirata alla tradizione nordica, è una stout dal colore impenetrabile a cui abbiamo aggiunto durante la bollitura ostriche fresche con tutto il guscio: per la precisione, le pregiate Fin de Claire N2 provenienti dalle coste della Bretagna (15 kg di ostriche per 500 litri di mosto). Al naso presenta belle note tostate e leggermente sapide, minerali, date dal guscio. In bocca risulta morbida e piena, con un piacevole finale salmastro ma non invadente dato dal mollusco.

English: Inspired by the Nordic tradition, it is a dark coloured stout. During the brew we added fresh oyster with their shell. They were the rare Fin de Claire N2 from Brittany's coast, to be precise (15 kilos of oysters for 500 litres of gyle). Its aroma has beautyful roasted, slightly savoury and mineral notes given by the shell. It has a creamy and full-bodied mouthfeel, with a pleasant, not too strong salty ending. Read Less

Una delle "birre del territorio" del birrificio. In questo caso l'ingrediente principe sono le radici di genziana che provengono dalla cooperativa Micillo di Consigliano. Le radici sono utilizzate in un'infusione della durata di 2 minuti durante le ultimi fasi della bollitura. La birra al naso è dominata da sentori pepati, di sottobosco e floreali. In bocca il primo impatto è mieloso, seguito da sentori di radici pepe e frutta a polpa gialla. Il retrogusto è delicato ma molt persistente.

La Caos è una vecchia conoscenza nel mondo Birra del Borgo, ma quest'anno la riproponiamo con una novità! L'abbiamo avvicinata alla sorella L'Equilibrista, utilizzando il 60% di mosto di Duchessa e il 40% di mosto di Malvasia della Tenuta di Bibbiano. Come la sorella maggiore, viene lavorata con il procedimento del metodo classico e il risultato è...esplosivo! Una freschezza ed un gusto unico.

ITA: IN EQUILIBRIO TRA IL MONDO DEL VINO E QUELLO DELLA BIRRA. Un colpo di fulmine tra il mondo del vino e quello della birra per un prodotto assolutamente nuovo. 40% di mostro di vino Sangiovese (della tenuta di Bibbiano, Siena, Toscana) e 60% di mosto di birra (la nostra Duchessa) fermentano insieme creando un’alchimia indimenticabile grazie alla lavorazione “Metodo Classico”.
Produciamo L’Equilibrista dal 2009 sempre a Settembre, in concomitanza con la vendemmia e il prodotto finale varia in base alle annate proprio come nella tradizione vinicola.
Come da antica ricetta è il liqueur d’expedition invece a dare continuità nel tempo, grazie ad una piccola quantità di Equilibrista dell’annata precedente, sempre mantenuta nella sua formula magica.

the beer and wine worlds A love story between beer and wine, that meet and find a perfect balance in an absolutely new product. 40% of Sangiovese wine must (courtesy of Tenuta di Bibbiano) and 60% wort ( our very own Duchessa) ferment together, as a unique alchemy. Once the beer is bottled and cellared, we start a year long Champenois process
in which the bottles are set on pupitres, daily hand rotated to allow the yeast to
settle towards the neck of the bottle, which is then removed. Then a liqueur d’expedition is added and the bottle is capped with a traditional mushroom cork.

Siamo andati alla ricerca delle origini della birra per ricreare una prodigiosa ricetta ispirata alle antiche bevande fermentate. Usiamo ingredienti decisamente insoliti per una birra (nocciole, melograni, resina naturale, miele e...) sulla base di ritrovamenti archeologici. L'Etrusca è poi lasciata a fermentare in grandi anfore di terracotta costruite appositamente per noi. Il risultato è un vero e proprio "reperto archeologico".

We went on a quest to discover the
origins of beer, and created a recipe
inspired by ancient ales. Very unusual
ingredients for a beer are involved
in this ale (hazelnuts, pomegranate,
tree resins, honey and…) based on
actual archeological findings. Etrusca
ferments and matures in big terracotta
amphoras made specifically for us by a
local craftsman. The color is similar to
amphora aged wines, aromas are honey
like with red fruit notes, along with
unusual mineral ones. The mouthfeel
is tart with honey flavors and again,
mineral nuances. The result is a true

In bocca l’ingresso è incredibilmente scorrevole, il corpo snello, il finale bilanciato ed elegante come da tradizione di Birra del Borgo. ITA: UNA PRUNUS TIRA L'ALTRA
Chiamata così dal nome botanico del frutto (Prunus Avium o Cerasus in base alla varietà) La Prunus è stata ottenuta aggiungendo alla Duchessa circa il 20% di ciliege fresche con tutto il nocciolo, delle qualità Corniolo, Ravenna e Graffione. La frutta viene messa in infusione a fine fermentazione. Diversamente dalle classiche "Kriek" di scuola belga, è una birra non eccessivamente acida (mantenendo una certa caratteristica della Duchessa) e per nulla stucchevole, visto che ad un ingresso dolce-acido segue un retrogusto amaro molto bilanciato.
ENG: One Prunus leads to

This beer takes it’s name from Prunus
Avium, cherries.
Prunus is made by adding 20% in volume of
fresh, whole cherries to Duchessa.
Differently from traditional Belgian Kriek
beers it is not as overly tart, thanks to
Duchessa’s smoothness.
It is not too fruity and sweer either and
finishes with a nice pleasant

ITA: CASTAGNALE... 2.0! Abbiamo deciso di dare una nuova impronta ad una delle nostre birre storiche! La base di malti è stata arricchita, aumentando di 3 gradi la grdazione alcolica, il lievito che abbiamo scelto è un lievito a bassa fermentazione, la percentuale di castagne è rimasta invariata (20%). Il malto è stato affumicato da noi con bucce d'arancia, lemon myrtle, coriandolo, radici di genziana e... castagne. Al naso sono nette le note affumicate, mitigate da una nota dolce di miele di castagno. AL palato èmorbida ed avvolgente, con una nota leggermente amara che pulisce la bocca ed invita ad un altro sorso.

ENG: CASTAGNALE… 2.0! We decided to give a different touch to one of our historic beer! The base of malts has been enriched, the ABV has grown by 3%; a bottom-fermenting yeast has been chosen. Only the amount of chestnut is unchanged (20%). We smoked the malt with orange peel, lemon myrtle, coriander, genziana roots and….chestnut! ITA: NON C'E' DUE SENZA TRE! Dopo le sorelle Rubus e Prunus è arrivato il momento della Fragus! La base è sempre la nostra amata Duchessa dove aggiungiamo 100 gr./litro di fragole fresche appena raccolte. La freschezza, ma anche l'acidità, delle fragole si ritrova sia al naso che al gusto conferendo alla birra un carattere unico.
