The first in what will be series of traditional meads aged in barrels previously used for aging beer, this batch of The Turn is an Orange Blossom Mead aged in used barrels from our friends at Toppling Goliath. Taking on massive milk chocolate flavors, this batch saw the orange blossom base still at center stage. The end result is reminiscent of a chocolate covered orange wedge candy, with a clear representation of citrus fruit standing out. We filled a couple of these barrels with the same Orange Blossom base, and located them in different parts of the room that saw varying levels of temperature and humidity resulting in subtle differences in flavors and aging times.

While we consider this to be a traditional at heart, it may fit a bit more in the experimental category.

Sleight is a Meadowfoam Blossom Mead base that was aged for roughly 10 months in the barrels last holding our "Used Barrel Blackjack".

While the stout characteristics had been completely pulled from the barrels once we aged our Black Raspberry mead in them, you can tell that this Meadowfoam traditional picked up a slight purple hue to it from all the Blackjack that was now trapped behind in the staves.

With a bit of additional oak to still give, this barrel truly transformed this Meadowfoam base into something new entirely, with a final product that is reminiscent of some of our first experiences with meads from Poland. A barely there Black Raspberry profile meets Vanilla/Marshmallow and a touch of tannic oak. Read Less

**We highly recommend decanting 20-25 minutes prior to consuming**

Ghost Particle is one of the most complex and evolving liquids we have produced. A blend of four unique regional wildflower honeys were independently fermented with four different yeasts. We utilized component blending prior to aging in a former J Wakefield Bake Kujira Maple Cognac barrel.

This is a spirit drinkers mead. Extended barrel contact time resulted in aromas of heavy oak, toasted marshmallow, and caramelized brown sugar. As this project opens up via decanting, the barrel heat dissipates and reveals a lingering maple candy sweetness that remains on the palate long after the liquid is gone. Read Less

A special select blend of three Florida honeys, Palmetto, Black Mangrove, Gallberry, and matured with a blend of American and French Oaks.

For Florida BAST we decided to blend three of our favorite lesser known Florida honeys. The different ratios of each produced very different results, we went with the blend that resulted in the most complex journey of flavors showcasing the citrusy cotton candy sweetness of Palmetto, the rich caramel with a hint of bitterness from the Gallberry, and the incredibly smooth butterscotch of the Black Mangrove honey.

We aged this mead in a neutral barrel loaded with a blend of different types of oaks (species, formats, toasts) to let the micro oxidation weave everything oak has to offer into the mead. Read Less
