M.J.K. was brewed, aged, blended and bottled in honor of our son. This English-inspired Barleywine was conceptualized more than 3 years ago and was first brewed in June of 2018. As time has passed, three unique recipes for M.J.K. have been brewed and then aged for their first rest in Willett Family Estate barrels. These unique expressions allowed our ever-changing perception of what Barleywine is to be explored and revealed to you through our precise blending of double barrel-aged and triple barrel-aged Barleywine.

This years vintage is a blend of time. We had a few lingering barrels from the fall of 2017. To that we added a few more from early 2019 and topped it off with some from the fall of 2019. All of the barrels we used were bourbon. The bulk of which were previously used for Heavin Hill, with some Angel’s Envy and even a couple Wild Turkey in there as well. But this years version isnt really about a big bourbon character, it’s more focused on the subtle bourbon flavors that are inherent to this beer. After the sweet punch right away subsides you will get flavours such as Dried figs, raisins, and vanilla. Then the malt gives Paragon it’s caramel, toffee, and chocolate flavours that rounds out with mild sweetness, bringing it full circle.

The beer has a slight viscous texture which coats your mouth in a flavor explosion of all the forementioned tastes, while doing it’s best to hide the alcohol.

Drinking reccomendations are to serve it around 7-8 °C in a snifting glass and sip it slowly allowing to warm as you go. Your mouth will discover new flavors as it does. For us this beer represents our passion for the old style and the life of a brewers work in a bottle. Please enjoy with sofistication.

Our Barley Wine is the most special beer we make, being produced only once every year. It’s a blend of different bourbon barrel-aged vintages that have spent more than a year in wood. We blend the different barrels, and add a bit of freshly brewed Barley Wine to obtain the best possible version.

This year, the Barley Wine was brewed using a double-boil technique in which we evaporate the beer to a high concentration of sugar, add water back to the wort, and then boil it down again to increase Maillard reaction processes and build up some intense caramelization. We went easy on the hops to allow the malt and bourbon characteristics inherited from the barrels to be the champions of this beer.

The aromas and flavours are intense, and should be enjoyed slowly by serving at room temperature to allow even more layered nuances to shine through and add to the
beautiful complexity of this beer. We hope you enjoy this as much as we do.

Yeast: Ale

(perfect for cellaring)

APPEARENCE
Dark red / brown. Tan head with copper laces.

AROMA
Dried fruits (figs, prune, raisins), caramel, oak, bourbon, molasses, vanilla,
coconut and more.

FLAVOUR
Similar to aroma. Caramel, dark fruits, sweet oak and bourbon.

BODY
Intense but not overly, powerful and sweet but not cloying. Balanced. Read Less

For his grand debut, Lead Production Brewer, Chris Raubenstraw created a lot out of very little. Maris Otter, the traditional English barley malt, completely brimmed the mash tun for a long soak. A portion of the first runnings was boiled and reduced, triggering the Mallard Reaction; through which, the vigorous heating of sugars added deeper color and flavor. Clocking in at 12.8%, this batch spent 20 months in a mix of Heaven Hill and Four Roses Bourbon barrels. It then spent another 1.5 months in the bottle. Sulla Terra is a blended Barrel-Aged Barleywine by our brewer Brian Ivers. Brian blended up the first blend in January of 2019 and for the 2020 release, we let him have free reign in our barrel room for this blended, barrel-aged Barleywine. Brian has had a knack for brewing some of our favorite malty beers, and his blend here is no exception.

While blending For Gabe, as we had samples from every corner of our barrel room free for the tasting, Brian started honing in on what he wanted the 2020 release of this to taste like. He ended up tediously blending and deciding on a beautiful blend that consists of:

Barrel 397 - Experimental English Barleywine aged in a Maple Syrup Weller 12 barrel for 18 months
Barrels 370, 371, 372 - Anabasis aged in Blanton’s barrels (blend 4 barrels) for 21 months
Barrels 332, 333 - MJK aged in Willett Bourbon barrels for 25 months

The success in flavor and uniqueness of these blended Barleywines and Barleywine/Stout blends has been a new, fun, invigorating challenge for us brewers and is something that we want to focus on in the future. Brian’s Sulla Terra has been a huge inspiration for a future blended Barleywine for Side Project as well. Read Less
