We still got it! This 3 year rum barrel aged imperial stout was brewed in the spring of 2018with one of our best friends Chris Treanor, who left Galway Bay Brewery in 2016 to join White Frontier in Switzerland. This classic imperial stout was brewed with 10 malts to 24 Plato OG, then racked to rum barrels and aged for 3 years where it gained an extra 3.8% from the barrel maturation. The taste has layers of chocolate and caramel on a delicate frame, with notes of dusty cocoa, a pleasing rum spice and some booze warmth on the finish. Brewed by friends to share with friends. Back in Feb 2020 we brewed four of the largest mashes ever at Galway Bay to collect one full tank of super-high gravity wort. This all-malt 33 Plato stout Is the biggest beer we’ve made to date. Lagered in a steel tank for 1 year before aging in Bourbon & Rum barrels for an additional 9 months. This decadent stout oozes chocolate, cocoa & finished with a kiss of salted caramel. Our first Triple IPA has arrived and it’s an absolute belter. This summer we got together virtually to collaborate on a massive IPA that was initially destined for release around July to mark the date that Fidelity 2020 should have been working its magic. Together with our friends at Barrier Brewing Co, Garage Beer and Naparbier, we set out to brew the same base beer and work our own hop selection on top to produce a collect-em-all extravaganza. We’ve been extremely late to the party as we’ve pushed forward release of our own contribution to now close out the year on our biggest collab beer yet, but it’s a pretty amazing way to finish out year 1 at our facility in Ballyfermot. In April 2018 we brewed a double mash Barleywine wort which was boiled for several hours, fermented long & cool before being aged in select Bourbon & Vermouth casks. From that original 2018 casking, we blended now 4 year old Barleywine from those vermouth & bourbon casks with a portion of young Barleywine for a fresh citrus hoppy kick. Weighing in at 9%, this dessert beer was aged in Irish whiskey barrels for 4 months, then transferred onto Peruvian Chingama coffee beans roasted locally in Co. Sligo by Carrow Coffee.

Tasting Notes:
A Barrel aged imperial Irish coffee pastry stout that provides notes of sweet Irish whiskey, vanilla, caramel, as well as brown sugar and ripe plums from the Chingama coffee.

Tasting Notes:
An intensely flavoured, barrel aged imperial oatmeal stout. Roasty and bittersweet, with a noticeable alcohol presence. Sweet vanilla and oak flavours derived from Heaven Hills Whiskey Barrels meld with roasted coffee and dark chocolate notes to create a full-bodied, velvety, luscious texture.

These additional ingredients are integrated artfully into the beer, never losing sight of the base beer & the profile achieved through multiple barrel aging & blending. They simply amplify the chocolate profile beyond where an all-malt mash could take you. Our desire, at Porterhouse Brew Co, to create beers of increasing complexity is the inspiration behind this brew. A mash bill of seven different malts complemented by seven separate hop additions, was brewed continuously over the space of 24 hours. A whole day’s brewing resulted in an immense concentration of malt flavours. The resulting beer has matured in freshly emptied bourbon and sherry casks from the Dingle whiskey distillery. What can we say? We love Amarillo. When you get the good stuff it’s unbeatable... and man, this year we’ve got the good stuff.

Amarillo is one of those rockstar hops, not crossbred through a special program but found reportedly just growing wild out the back of a hop farm up in Washington and immediately recognised as a hop that would change things up in a big way.

We strive to get the stuff that’s right there in that sweet spot of the picking window that gives us everything we’re looking for in this hop, heavy tangerine, citrus, a touch of lychee and orange and a low end rumble of stone fruit. Apocalypse Dreams is a beer constructed around all that. We’ve taken a deeper, sweeter maltier base of more Maris, Oats and Wheat and laid this on with 7g/L of Amarillo in the whirlpool and then two consecutive 12g/L additions of Amarillo making this a pretty good 3D experience of this tangerine dream of a hop. We’ve gone with BBC Citra on this one for a more ‘oily’ low end to compliment that bright passionfruit and pineapple juice that is Strata and assaulted this fermenter with two additions of both varieties and built this to a 24g/L can’t see through the fog haze of a hop soup. A DIPA fermented out with Vermont, feed a ton (not literally) of wheat / flaked & malt oats followed by a double helping of your favourite Citra / Mosaic / Galaxy hops.
Peach / papaya / mango on the nose, velvety smooth on the way down.... / super soft sweet bitterness on the finish. Read Less

DIPA w/ Citra & Lemondrop

Cream on Chrome takes our usual grist of Maris Otter, Wheat and Oat Malt with a light water profile to ramp the juice up on another repeated assault of Citra in the whirlpool on its own.
Fermented on Vermont Ale Yeast then double dry hopped with rounds of Lemondrop then Citra again to build to 25g/L of a hazy juicy banger.
This one has all the mango and lychee of your Citra wet dreams then ramped up to 11 with the zest and sherbet notes of Lemondrop to boot. What comes out the other end is a DIPA super split with low bitterness and beautifully soft carbonation. Read Less
