Once you’ve completed the original Augment trio, where do you go next? To the brewer’s favourite of course! A beer that was birthed from a collaborative effort with our pals at North Brewing Co last year, and an in house favourite amongst the brewers and office alike, we’ve amplified this beer to the nines for our final TIPA of the year. Going with a 10min whirlpool addition of Mosaic at 80 degrees, we opted for slightly more bitterness in this beer to counteract the sweetness from the residual sugar on the mash. Backed up with our biggest employment of our “pyramid” technique yet, with 25kg of Mosaic, followed up with smaller 15kg and 10kg additions of Galaxy and Simcoe respectively, the motto here at Polly’s is to never stop improving, and with DDH Pines, we’ve jumped a level once again. Closing out the trilogy of some of the biggest beers we’ve ever produced is a step back to what we do best; welcome Five Years. After setting phasers to hype with our previous efforts at Quad IPAs, we wanted to nail absolutely every facet of this style for our fifth birthday; creating the best beer we possibly could and pushing the boundaries of what our brew kit will allow us to produce. Featuring an insane 28g/l dry hopping rate of Mosaic and Idaho 7, the flavour profile on this beer is all about candy sweetness - expect pineapple squares, bubblegum, sticky marmalade and mango. With a warm booziness just hiding in the background, and just a whisper of bitterness, this might be the stickiest, juiciest beer we've ever produced. Read Less

This birthday felt like a big one – after the torrid time we’ve had over the last twelve months, it felt natural to go big or go home this January. With new brewing vessels landing in the brewery this week, we decided to give the rickety old brew kit that carried us through our first three years one hell of a send off with the single biggest beer we’ve ever brewed – pushing ourselves and our equipment to the very limit. So big we had to brew it in two separate batches; we’ve mega-charged this beer with a 15kg whirlpool addition of Chinook, Mosaic and Simcoe to offset the sweetness of the mash, and rounded off with an 80kg dry-hop addition of Citra, Mosaic, Simcoe, Sabro, to create a potent, bonafide hop bomb; bringing all manner of sticky, juicy tropical notes, and piney bitterness to play off the warming booze in this feat of alchemy from the brew kit that served us so well for the last three years. Every Piece Matters is a beer we keep coming back to so often because our raven-haired head of sales loves selling it so much – the simple but mega effective hop bill of Citra and Mosaic being a combination that has followed us from those halcyon Loka Polly days right up to now. In tribute of one of our in-house favourites, it only seemed a natural progression to let it join the amped-up TIPA club and DDH Every Piece Matters is the result.
Positively dripping with tangerine, peach, and passionfruit notes, with just a little bit of grapefruit to back things up, we’ve pulled every little bit of flavour we possibly can into this beer. Awesome. Read Less

It was only a matter of time, wasn't it? The original Augment trilogy is now complete, as Rosa now joins its siblings Spur and Patternist in the TIPA club. Overwhelmingly popular every time we've brewed it previously, each incarnation of the headline act of our original three has progressively gotten better and better, and we've spared no expense on this version either. Featuring an insane 70kg of hops - ten in the whirlpool, sixty in the dry hop, we've given this version of our most well-renowned beer an extra lashing of Galaxy alongside its superstar lineup of Citra, Mosaic, Columbus and Ekuanot, just to give it that little push into the stratosphere. November 2017 was where it all started. Five years ago, our owner and founder Sean fired up a rickety, wood-bound brewkit, retrofitted to brew the hop-forward, ultra modern beers he was most passionate about, and with that, a brewery was born. From those extremely humble beginnings brewing once every eleven days out of a converted stable house, through some dizzying highs and terrifying lows, the dream has kept on keeping on, and we find ourselves where we are today - a modern, sophisticated brewery, in a space twelve times the size of our original brew space, capable of brewing up to eight times a week, looking after the livelihoods of fourteen incredibly talented team members, all of whom work for one of the brightest lights in British beer today.

With all of this in mind, we wanted to go big on our fifth birthday celebrations – half a decade of Polly’s is a big landmark for us, and what better way to celebrate five years than launching our barrel ageing program. Quinquennium is the next step in our brewing journey, and our first foray into working with wood. Wanting to pay homage to our home country, we’ve used Welsh whisky barrels, themselves ex-sherry barrels, to create an aged Imperial Stout perfect for a big occasion such as this. A thickly decadent pour beholds a deliciously complex beer; with roasted coffee, dark chocolate, and dark fruits on the front, before an introduction of sweet toffee and hazelnuts from the oak. After absolutely overwhelming feedback to DDH Spur back in early July, we immediately fastracked another of the original three Augment beers into TIPA mode, with Patternist lined up next. Arguably the most underrated of the original three, but scoring mega points for its simple, unfussy hop bill and ornate tile artwork, we’ve supercharged the hop bill on this incredible beer to an insane 60kg of El Dorado and Simcoe. Much like its upscaled sibling, this beer is about one thing and one thing only; pure and unadulterated juice. Next to zero bitterness, just straight up mango, passionfruit, and papaya to the max. Here it is, the big one. We’ve always had it in the back of our minds that a TIPA would be a natural progression after nailing down our DIPA game, but never knew where to wrangle it into our plans. The biggest beer we’ve ever brewed by a country mile; in-house favourite Spur is amplified to the max, with an insane 60kg of Azacca, Simcoe and Citra thrown in for a dry hop rate of 29g/l giving massive amounts of stone fruit, peach, mango, and passionfruit flavours bursting throughout. Our TIPA game feels like it’s been a little bit neglected since the turn of the year. Getting lost in the hype of our birthday release, this maxed out, amped up style is something we feel we’ve been gradually developing alongside our DIPAs as one of our strongest outputs. After completing the original Augment trio and the staff favourites for our DDH series, we’re now comfortable enough to let our TIPAs head out on their own without the rub of a previous beers reputation to carry it. Deep Fake is a mega charged, all-in tribute to our favourite hop varietal here at Polly’s HQ – Simcoe. With an insane 28g/L thrown in during fermentation, expect apricot, passionfruit and berry notes a-plenty, backed up with pithy bitterness on the finish. Insane. Read Less

We love to link our beers here at Polly’s, and 58bpm is a continuation of this trend. A distant cousin of our insanely popular Circadian Rhythm; which in itself was named for the brewer’s disturbed sleep patterns from their 7am to 8pm work days. 58bpm is a reference to the metronome used by Matt to get a decent night’s sleep after a long day at the brew kit. An almost identical hop bill to Circadian Rhythm of Citra, Simcoe, Mosaic and this time Azacca, albeit this time charged up to 40kg in the dry hop; this is a DIPA of insane flavour intensity – expect stone fruits, mango, pineapple and just a hint of grapefruit throughout. Well it’d be rude not to wouldn’t it? We’re all about innovation and using the most modern techniques and processes in our brewing here at Polly’s HQ. When our hop merchant presented the idea of Spectrum hops earlier in the year, we were immediately hooked in and interested to see what we could utilise them in. As hops in pure liquid form, we’re able to use less, but maintain the intensity of aroma and flavour throughout, adding an extra level of complexity we’ve never been able to achieve previously. With less vegetal matter within the beer too boot, this means we yield even more beer, which means more beer for everyone to enjoy! After the debacle of our Birthday Beer being as rare as hens teeth, we’ve returned to the QIPA style, and gone full big boy batch this time around. Featuring a mixture of 50kg of Mosaic and Citra pellet hops, paired up with 4kg of Mosaic and Citra Spectrum; expect mega intense gooseberry, lychee and grapefruit notes from Citra, backed up with a tropical medley of mango, peach and tangerine notes from Mosaic, along with a warming alcohol booziness. It’s been a hot minute since we fired up the brewkit and took the express train to TIPA town for a brand new variation on this ultra-potent style. After working through our back catalogue of classics this year, it’s time to christen a new entry in our TIPA game, everyone welcome Lone Moon.

When you’re going as big as this, it’s natural to get a little carried away on the hop bill and we’ve not left any stone unturned on this beer. Featuring five of the most intense, fruit forward hops we work with on a day to day basis here at the brewery, this is a thick, juicy, explosion of flavour.

With the freshest possible crops of Nectaron, Strata, Simcoe, Citra and Motueka all working in perfect harmony, expect a punchbowl of intense passionfruit, peach, berries, and bubblegum sweetness, backed up with dank weed notes and herbal complexity to stop this beer falling into cloyingly sweet territory. Two QIPAs almost a year apart from eachother. Whilst our first dip into the Quad game was a tribute to the loveable, rickety, woodbound brewkit that carried us through our first three years as an active brewery, This Never Happened is a salute to where we are now as a team, and where we're going in the future. Pushing the boundaries as far as we possibly can, this is comfortably the biggest beer we've brewed to date - utilizing almost a tonne of malt, and with a 15kg addition of Mosaic in the whirlpool to offset the natural sweetness of this beer, we've gone with the biggest dry-hop charge we've ever commissioned into a beer to impart all manner of tropical punchbowl flavours into the mix. Another 25kg of Mosaic? Go on then. 15kg and 10kg of Citra and Idaho 7? Bring it on. 10 and 5kg of Simcoe and Idaho 7? You're just spoiling us now. A soupy, pulpy, certified hop bomb of a beer, positively dripping with a medley of berries, pineapple, mango, passionfruit, and papaya, before just a whisper of pithy bitterness keeps everything in check. After the phenomenally successful Quinquennium and Quinquennium Reserve set the standard for our big, robust imperial stouts last year as incredible first entries into our barrel ageing program, we took stock and really were astounded at where we’ve come in such a short amount of time. From those incredibly humble beginnings as a two-man setup churning through back-breaking fourteen hour brew days, we find ourselves where we are today – working with some of the brightest talents in the brewing industry today, giving them a platform to flourish and excel at their profession. The original version of Oh My… turned out to have something in the way of a cult following when we released it back in April. Our collaboration with Chamonix-based Big Mountain Brewing Co utilised everybody’s favourite hype hop Sabro for the first time and set off an obsession which continues to this day, thanks to those super complex coconut, pina colada flavours, paired up with our old faithful Citra for some citrus balance. Fast forward to the present day, with a tonne of both Sabro and Citra in our cold store, and with the blessing of our French pals, we decided to scale up Oh My… with the Polly’s DIPA treatment. An insane dry hop charge of 50kg means those juicy pina colada notes are amplified to the max for a DIPA that drinks well below its ABV. Read Less

Every now and again you’ve just gotta shut up and play the hits when it comes to your hop bill. Citra and Simcoe, as well as Galaxy and Mosaic are two of the hop combos that arguably launched us as a brewery back in those seemingly very far away Loka Polly days, and we’ve smashed all four together for a greatest hits medley of our favourite hops in Positively Unattached. Featuring a total of 60kg in the dry hop, and amplified up to TIPA strength because why not? This beer is absolutely dripping with tropical notes, backed up with just a touch of grassy bitterness thanks to a flash in the pan, one minute at a hundred degrees Simcoe addition in the whirlpool to keep everything in check. Our friendship with the legendary Cloudwater extends for as long as Polly’s has existed at this point. As a source of sage advice and guidance throughout our brewing journey, we’re proud to have been able to share experiences with the titans of Manchester in both working and personal capacities over our eight years in the game. When it came to filling the collaboration slot for a big, bold double IPA we could only look to the innovators of modern beer in the UK to join us for our eighth birthday, not only on the brewing side of things but the artwork to boot, with Cloudwater’s go-to designer, the Manchester based Textbook Studio handling the label design. Wanting to embrace the progressive nature of the industry we operate within, and showcase the skills our respective brew teams are capable of, we’ve turned the hype dial up to eleven on this DIPA. We’d already been enchanted by our first use of Eggers Special hops, so when the prospect of working with another New Zealand blend in Mega Motueka came about in our initial discussions we leapt at the opportunity. Utilising further dry hop charges of Lupomax Citra and Nectaron Cryo, this DIPA solely focuses on hype and hype alone. Our finished product is a DIPA that positively rinses every last drop of lively lemon, muddled lime with brown sugar, tropical fruits, passionfruit, soft peach flavours, and pineapple backed up with a light dankness. Now that we’re clear of the dirge of winter, it’s time to kick ourselves into high gear and drop a big, and we mean BIG beer. QIPAs have always been a rarity in our output; a style so strong, and so heavily hopped that we keep it back to preserve its mystique.

With the advent of Spring being upon us, we felt there was no better reason to go back to this ultra-challenging style and Turning Fragile is the end result. With a beer this big, you need some serious balance, so a big addition of foundation hop Columbus is needed – touching a g/l in the whirlpool alone not too far away from the total g/l of some of our lower strength pale ales, a solid foundation needs some stupidity on the cold side, so why not go with a huge addition of hyper-concentrated Mosaic Lupomax, along with everyone’s favourite hype hop Nectaron?

A beer absolutely saturated in flavour – big passionfruit, pineapple, peach, tangerine and blueberry notes play off a bubblegum sweetness in this all out show of sheer alchemy from our brew team. Read Less

Festival season is certainly in full swing, and with festival season kicking into gear, so too does the opportunity for one of our favourite parts of our industry – collaborating with the very best in the country and inviting some of brewing’s brightest minds to North Wales to share their tips, techniques and tricks to help improve our own beers. Our friendship with Northern Monk extends back several years at this point; we were lucky enough to be considered good enough with our pale and hoppy output to earn a spot at Hop City not once but twice, and we’ve found them to be an endless source of advice as an elder brewery that have taken on pretty much everything across their existence. Having taken part in their renowned Patrons Project series of beers when we visited Leeds for Hop City two years ago, we were due a return leg and boy have we gone all out on Flutter & Fade. Influenced by Northern Monk’s own Tank Petrol series, we’ve amplified absolutely everything to the max on this beer – a triple IPA more than generously, almost stupidly hopped with 28g/l of El Dorado, Mosaic, Simcoe and Strata on the cold side, this beer is positively bursting at the seams with tropical mango, tangerine, blueberry, passionfruit and apricot notes, balanced by a hot side addition of Cascade to prevent things falling into cloyingly sweet territory. With a dry-hop bill that exceeds even one of our standard TIPAs, this is the easily the most hop-forward, flavour packed, insane piece of alchemy we've produced to date, utilizing the very best of what we had sat in our cold store. Featuring seventy (you read that right, SEVENTY) kilograms of hops, we've smashed through the 30g/l hopping rate ceiling with aplomb, loading this beer with equal parts El Dorado, Vic Secret, and Simcoe for a full on flavour explosion of stone fruits, mango, papaya, and dank, sticky, pine notes to finish. One of our favourite beers of yesteryear from our long-departed Originals range was the phenomenal Azacca Mosaic DIPA. The super ripe tropical fruit punch batted off the mellow, but ever present bitterness in a wonderful display of harmony. With three additional years of brewing experience since we last brewed this beer, we decided to supercharge the same beer, throw in some extra Simcoe and Centennial for a little added new school juice and old school bite, and lavish it with that Augment touch thanks to our bespoke in-house LA3 yeast strain for insane amounts of suspension and mouthfeel. A DIPA a little more reserved on the ABV but no less reserved on intensity. A nod to the past with sights set solely on the future. Read Less

Featuring an equal split whirlpool addition of both Citra and Simcoe to bring some pithy bitterness to the party and slathered with a nutsy 22g/l dry-hop charge of Strata, Nelson Sauvin, Simcoe, Idaho 7, Galaxy, and Citra, this is an all out fiesta of new school juiciness. A DIPA made exclusively for the hop-heads, expect to find a doubly decadent beer filled to the nines with passionfruit, gooseberry, pineapple, mango, stonefruit and dank weed notes littered throughout. Acapella made a fleeting cameo as part of our output late on last year, the super small batch release only making it out to a super limited number of people before it disappeared back into the wilderness again.
When looking through our brew plans for a beer to rebrew, we decided there was some seriously unfinished business with this beer, and as a result, Acapella is back - absolutely loaded to the nines with the freshest Mosaic, El Dorado, Simcoe and Columbus we could possibly get our hands on; version two is arguably better than our first effort.
Mango, papaya, passionfruit and just a little bit of pithy grapefruit bitterness are all bursting from this amped up, maxed out DIPA. Read Less

It’s always a given that when it comes to Birthday Beer time, we’re always going to dip over to the dark side. Who better then to extend an invitation to share knowledge and expertise with than one of the best in the game today when it comes to imperial stouts, and one which we’ve worked closely with since their launch, Azvex? As longtime admirers of their big, decadent pastry stouts, we couldn’t think of anyone better to work with than our friends from just over the water in Liverpool. Working our recipe around the fika breaks we have at Polly’s every working day, we loved the idea of creating the flavour profile of a danish pastry in this beer - utilising the fresh vanilla we’ve applied to our Oat Cream beers, alongside raisin for a subtle fruit sweetness, and a final flourish of cinnamon to balance everything out. Featuring artwork produced by the wonderful local artist and good friend of the brewery Jake Cross, this beer took up a grand total of five separate brew slots in our brewing week, with a ridiculous twenty-four hour slow rolling boil to concentrate all those sugars. the result is a slick, oily and decadent imperial stout - rich in flavour but not cloying, and widely regarded within the brewery as our best imperial stout brewed over our eight year history. After a single hop showcase paired up with Kveik earlier in the year, it’s time for Team Polly’s to go back to basics and do what we do best; Mosaic + LA3 = JUICE. To say we’ve amped up the hop bill on this beer would be an understatement – Keeler has a full 50kg of this incredible varietal thrown into the mix and imparts an absolute metric tonne of berry, bubblegum, and tropical notes, with underlying notes of earthy pine to keep everything all in check. Featuring an all new in-house LA3 strain brought in from the States and designed specifically for us, this beer is everything we love about the new school – opaque, pulpy, all out juice. So we've taken our first plunge into using Spectrum hops in the overwhelmingly popular Spectrum range released in April, where do we go next? Pure, unadulterated, "let your hair loose" beer, that's where! We noticed that the TIPA from our Spectrum launch was, mostly, the favourite out of the four, so we've gone huge on this style with our biggest dry hop bill to date; utilizing 20kg each of pellet Citra and Mosaic, before supercharging again with 2kg of Spectrum Citra and Mosaic. In layman's terms, a triple dry-hop on the cold side. The result is an absolutely intense flavour bomb of pink grapefruit, gooseberry, and lychee from the Citra, with a hearty show of tangerine, mango, and that distinctive berry medley from the Mosaic. Weaving their way throughout our history, their head of sales Adam, and marketing manager Stefan in particular have been an endless source of advice, guidance and reassurance when times have been a little stressful and we’ve found ourselves questioning if what we’re doing is right or not. In spite of all this, we were absolutely astounded that we had never actually brewed a beer with our pals from M1 and set about fixing this by extending an invite to our sixth celebrations. Naturally game for a good time, we couldn’t look any further than playing to our respective strengths and cooking up a big, bold, brash hazy DIPA just a whisker under our new and easy to understand duty thresholds. It all started as most collaborations seem to start - a busy and bustling festival atmosphere, sharing beers from some of the best breweries in the world, when a suggestion is thrown into the elated, boozy ether - shall we brew a beer together? After meeting for the first time at one of our first international festivals Billies Craft Beer Festival back in late 2022, we had no idea that OG craft titan Kees Bubberman - former brewmaster at Brouwerij Emelisse before launching his own brewery in 2015 - was actually serious about working with us. An opportunity arose earlier in the year that allowed for a visit over to the UK and planning immediately began - our real strength lies in big, strong silly beers, so why not brew a big, strong silly beer together? Citra and Galaxy – need we say more. Pure orange sherbert on the nose, with fresh squeezed mango juice to boot. On the palate, Galaxy takes the stage and shows exactly why it’s one of the most sought-after hop varietals on the planet. Passionfruit, peach, and citrus notes a-plenty, paired up with huge mouthfeel thanks to the generous helping of oats in the mash. All wrapped up in a healthy lashing of LA3 for maximum suspension, this is exactly where we want our DIPAs to be.

We've been extremely humbled and lucky to work overseas with some of the best breweries and festivals on the planet this year - a sign of where we want this brewery in a sleepy corner of North Wales to be. Whilst we were working in Norway over the summer, we struck up a friendship with Polish pastry sour slingers, Funky Fluid. Whilst chewing the fat and talking all things water chemistry, pitching rates and the assorted fluff brewers harp on about, the conversation naturally swayed toward what kind of beer we could brew together. Opting to go down the pale and hoppy route after hearing their interest in working to our dry-hopping rate, and utilising HBC-630 which they really vibed off, the result is Chameleon - possibly our stickiest, most decadent DIPA to date. The aptly named Wallow – literally to indulge in something in an unrestrained way – is our brew team going completely free rein on a style that we believe is truly nailed down here at the brewery, the double IPA. A celebration of where we’ve come from – kicking out those hop forward pales and IPAs in the old stable, where we are currently, and where we’re going in the future, this beer features a simple two hop lineup as an homage to our Originals range, but pushes the 27g/l mark in terms of intensity – completely and fully Augment! Hitting big with huge dry-hop additions of Mosaic and Sabro, pulling every last drop of those incredible coconut, mango, lime, and papaya notes, before finishing with a mellow bitterness at the end, Wallow, we’re not worthy. We’ve developed a real taste for going big here at Polly’s HQ, and we’re sating our taste once again with Amateur Dance. Our owner Sean has taken the lead on this one, employing his pyramid dry-hopping technique to full effect in this maxed out, full on DDH DIPA. Mosaic is the dominant hop varietal with a huge 30kg added, before progressively smaller additions of El Dorado and Simcoe accentuate and give this beer multiple levels of depth. Named in honour of his soundtrack for when he works into the small hours to ensure our brewers have as stress free a brew day as possible, this huge beer absolutely drips with dank, stonefruit, mango and pineapple notes, before being reeled back in by a hearty pine finish for balance. Absolutely loaded to the nines with this awesome stateside favourite, we’ve supercharged this single-hopped double IPA with a 50kg dry-hop charge and a 10kg whirlpool addition to create a beer positively dripping with a medley of intense flavour profiles. Our TIPA game has been ever evolving here at Polly’s since that first brew of DDH Spur back in 2020 and we’re back once again with our latest step into this incredibly complex and intense evolution of the IPA style. Frozen Solstice takes four hop varieties that have interwoven themselves throughout our history in Talus, Nectaron, Strata and Simcoe, and amplifies them up to eleven, with a dry hop charge touching 30g/l of flavour, and a hype factor up to twelve by utilising cryo versions of both Talus and Nectaron for extra potent flavour. Expect to find bombastic levels of fresh cut citrus, and insane amounts of tropical fruits positively bursting at the seams from this all in, maxed out beer not for the faint of heart. Read Less

We’re all about pushing our own boundaries here at Polly’s HQ. Whilst 2020 was an awful year all around, it’s allowed us to put our heads down and focus on making our pale and hoppy beers the best they can possibly be. Our favourite discovery of last year was easily our patented pyramid dry-hopping technique. Seeing as it would be our final packaged beer of the year, we figured we may as well see how far we can go with this technique, and have gone for four different varietals on this beer, as opposed to our usual two. A hearty 20kg addition of Citra is followed up by 15kg, 10kg and 5kg of Mosaic, Centennial and Sabro respectively to accentuate each individual flavour profile on this amped up, maxed out, juice-fest of an IPA, with just the faintest touch of bitterness to keep things in check. We wanted to go big on our fifth birthday celebrations – half a decade of Polly’s is a big landmark for us, and what better way to celebrate five years than launching our barrel ageing program. Quinquennium was the next step in our brewing journey, and our first foray into working with wood. Wanting to pay homage to our home country, we’ve used Welsh whisky barrels, themselves ex-sherry barrels, to create an aged Imperial Stout perfect for a big occasion such as this. A thickly decadent pour beholds a deliciously complex beer; with roasted coffee, dark chocolate, and dark fruits on the front, before an introduction of sweet toffee and hazelnuts from the oak and a warming booziness finish things off. We’re all about innovation and using the most modern techniques and processes in our brewing here at Polly’s HQ. When our hop merchant presented the idea of Spectrum hops earlier in the year, we were immediately hooked in and interested to see what we could utilise them in. As hops in pure liquid form, we’re able to use less, but maintain the intensity of aroma and flavour throughout, adding an extra level of complexity we’ve never been able to achieve previously. With less vegetal matter within the beer too boot, this means we yield even more beer, which means more beer for everyone to enjoy! Of course we were going to go big on a TIPA style – with this beer featuring a mixture of 25kg of Mosaic and Citra pellet hops, paired up with 4kg of Mosaic and Citra Spectrum; expect super intense gooseberry, lychee and grapefruit notes from Citra, backed up with a tropical medley of mango, peach and tangerine notes from Mosaic. For this newest version of the OG Polly's lactose IPA, we're going Stateside with a full on lineup of the best hop varietals the US has to offer in Citra, Mosaic, Simcoe and Azacca. A massive amount of juicy pineapple, passionfruit, and orange notes from Azacca and Simcoe meld together with blueberry, mango and grapefruit notes from dependable duo Citra and Mosaic, backed up with an ultra smooth mouthfeel from the generous use of oats in the mash and lactose in the boil. A big part of our ethos here at Polly’s is getting the absolute max out of every ingredient we use to brew with.

This is all on show with Every Piece Matters – two of our favourite hops in Citra and Mosaic receive the Augment treatment, as bright citrus notes meld with tropical fruit punch flavours to produce an IPA which is all about super low bitterness and high juiciness.

After such incredible feedback on the four previous iterations of this beer, we were itching to brew it again; this time with every one of the techniques we’ve learned over the last four and a half years. An amplified version of our phenomenally popular Citra Mosaic IPA from our dearly departed Originals range; bringing all those incredible hop characteristics to the fore; with bright, punchy citrus fruit notes, backed up with tangerine, berry and bubblegum notes from the freshest possible crops of these Stateside slammers.
