Our whenever we feel like it, entirely experimental, and exploratory DIPA returns today. After a full 7 years of continuously brewing and attempting to refine our hop forward beers, we often feel the need to brew one that displays a certain level of almost singular cohesion, without it being about just changing the hop varietals, or just adding more of them. Our aim is to capture a moment in time that coincides with our current and immediate interest in hoppy beers.
In short, this limited release is about focusing in on a facet of the beer or process that we’re currently obsessing over… for this one, we became increasingly interested in using a proprietary blend of yeast strains. While we’ve utilized these strains in the past for monoculture fermentations, we couldn’t help but wonder what each might bring to the final beer when fermented amongst each other.
The second of its cryptic name shows up in a glowing, yellow hazed, bone white headed pour. We find impressions of bright tangelo, strawberry vanilla like cream, mango, and deep impressions of all the citrus oils. Feeling both fluffy-soft and dry, drinkability remains at the forefront. Show Less
