Arguably the most labor-intensive beers we’ll can all year, and maybe one of our most internally anticipated yearly releases, we proudly present our most involved version of Czech Pale Lager. Our take on this style, has gone through a serious amount of refinement by way of process, ingredient, and fermentation choices over the few years we’ve brewed it… and the information gained shows here stunningly, if we dare say so ourselves.

Brewed with a serious focus on the process of triple decoction, whereby portions of what will become the sweet wort we send to the kettle, gets boiled on its own and returned to the main mash in smaller portions to raise the temperature of the overall mash, enhance the color of the finished beer, and to extract a deeper malt quality that while difficult to quantify, it simply cannot be denied.

Fermented with our house Czech Lager strain, we taste notes of orange blossom honey, country loaf, deep malt character, and slightly floral noble hop spice. Brewed for, and by brewers, this beer embodies what we, at least, are after when it comes time for us to enjoy a beer, rather than just worry over and then make them. It can’t always be DDH this, or spirit barrel aged that…. For us, it’s almost always simple and true lager, and we hope you’ll see it that way too. Show Less
