For this curious exploration into the art and science of hoppy beers, we experimented with stressing our yeast in new and untrialled ways to coax exclusive and intriguing fruit esters from fermentation. The result, paired with massive doses of potent American Hops, is a hugely aromatic beer with a soft flavor profile featuring singular notes of honeydew melon, ripe tropical fruit, a hint of yellow raspberry, and sweet overripe pineapple.
