Sort Skov Sur

Sort Skov Sur is one of the biggest fruited trat beers we have ever done here at Brus.
First we brewed a huge base beer, somewhat reminiscent of our double IPA's, featuring wheat and oats. To that we added a healthy amount of lactose, both to balance the acidity of the lactic acid bacteria and fruit, but also to increase the body of the beer.
After souring, we added some of our favorite fruit, namely raspberry, dark cherries, blackberries and strawberry. All together, nearly 100 kg of fruit was added, which makes this beer most highly fruited beer we have ever done.
