Finished aging and secondary fermentation. POP!!! Wherein the tip overflowed in a burst of exuberant bubbly ebullition.

Paco Nathan: Light, dry, crystal clear, with so many bubbles. The musty flavor of aromatic gravensteins has converted into a delicate smokey hint.

2016 Harvest: dry, crystal clear, and golden. Aroma like taking a bite of a fresh apple, followed by a quaff of Côtes du Rhône white blend.

Earned the Beer-giving (2016) badge!

First brew from our Tiny Farm in West Sonoma county. Sample at first racking; already has dry, complex flavor, not unlike a Wild Side.
