Seek the Wild Batch 1

We are thrilled to offer Batch 1 of Seek the Wild this week at the Barn. Seek the Wild is a new series that will feature, among other things, our own strains of wild yeast we have isolated growing around the farm. Seek the Wild batches might be tart, may feature souring bacteria, or be conditioned on fruit - Batch 1, however, is none of the above. We wanted to begin by offering something elegant yet complex that showcases our yeast strains and the oak foeders in which the beer spent some time. Batch 1 is a farmhouse base and was primary fermented in stainless with two different yeast strains before being sent to one of our oak foeders, where we pitched Brettanomyces and let it rest for over 6 months. It was then bottle conditioned and given a final rest. Tasting notes include minimal to no acidity; huge notes of vanilla, oak, and slight earthy funk, and a beautiful silky mouthfeel. Batch 1 is not your typical wild ale...and we love it that way. Show Less
