Culminate (Batch 2)

our Belgian Gueuze-inspired blend of 1, 2, and 3-year-old spontaneously fermented beer! Every year we put away stock of Lambic-inspired beer brewed as closely to Belgian tradition as possible. It involves turbid mashing, a long boil with aged whole leaf hops, natural cooling and inoculation in our rooftop koelschip, and barrel fermentation. The wort is fermented only with the natural yeast and bacteria that land on it overnight while cooling. This batch of Culminate was blended and bottled on June 25, 2020, and conditioned only with the cultures present in the beer. The layered flavors of funky fruit, cheesy hops, gentle oak, a bright citrus acid profile, and pleasant natural carbonation give this beer unrivaled complexity for its strength. Show Less
