This beer about is a result of us delivering beer to a Michelin star restaurant in Copenhagen - who's name is related to the bird on the label - can you guess which one?
They make a lot of food over open fires and they asked us if we were interested in smoked beer. When then contacted the person who smokes all their game for their menu and had them smoke malt just for us - in a process taking 2 days!
We then brewed this helles with that malt. Using just pilsner and smoked malt, along with German grown Perle and Hersbrucker hops. And using a traditional step mash process, we kept it as simple as possible. We then did a long slow fermentation at 10 C and than 6 weeks of lagering time! Making this the longest production time of any beer we have done so far.
Naturally carbonated and with might very well be our most beautiful label yet, we are super proud of this beer! Show Less
