Organic Apple Cider

The Organic is a cider that has been many crushes in the making. Through our custom crafted solar we have been adding cider, freshly crushed and filtered through straw, to the system. This then sits on solids and lees with agitation monthly to promote the yeast to impart nuttiness and complexity. This product is unfiltered, so will be cloudy and full-bodied. As it is a solar it will show a balance of characteristics of both fresh and aged cider.

This is our ode to a Solera System. We have selected parcels from some of our best batches of cider over the last 4 years and set them aside in oak barrels to co-mingle and age gracefully on yeast lees. The resulting cider shows bready and nutty notes from the lees .
Most interesting of all is the balance between the aged characteristics of old batches when paired with the freshness of more youthful material.
