This beer was brewed with 100% Estate ingredients from the historic Cody Family Farm. It is a Belgian Style Pale Ale with all Colorado Malting Company grains, Centennial hops grown onsite, Waverly well water, and a wild sac yeast strain harvested by Jason Cody. Grain bill is straight forward with 80% CoMaltCo Special Wilderness Malt, 10% roasted 60 L Crystal Malt, and 10% Dextrine Malt. During the brew, a high strike temp ensures sweet and full flavors. It is also hopped 8 times during the boil, adding the pale ale bitterness to compliment the unique yeast flavors that come from the Colorado Spontaine Yeast. Watch out for hoppy bitterness, yeasty bread flavor, and light banana and clove.
