라즈베리 압착즙과도 같은 향이 난다(온도를 살짝 올림) 혀에 닿으면 처음엔 시큼하다고 느낄 수도 있으나, Cuveé des Jacobin 보다는 덜 시큼하다 온도가 낮았다면 자칫 해초같은 향이 날 수도 있었으나, 온도가 올라가니까 라즈베리 압착즙과 함께 즐기는 맥주 같은 느낌이 난다 역시 얘네는 맥주를 잘 만든다..

라즈베리 들어간 식초는 항상 김이나 파래 같은 향이 나네. 깐티용 로제보단 덜하긴 하다. 온도 낮을 땐 생 토마토쥬스 냄새 났다가 오르면서 라즈베리 향이 나고 맛은 향 따라가는 편. 중간에 새콤짭짤한게 혀가 살짝 오그라들다가 끝에 깔끔하게 마무리.
