Innocent Until Proven Quilty

We’re big fans of smoked beer here at Selvedge, but we realize Bamberg-level smoke intensity might be a little much for some people. With that in mind, we’re happy to introduce ‘Innocent Until Proven Quilty’, a smoked beer for the smoke-curious. This garnet colored lager was built on a base of beechwood smoked Vienna malt & dark Munich malt and underwent a double decoction mash regime, lending rich maillard character & bready flavors. Tettnang Tettnanger hops provide subtle floral and zippy spice notes to play with ‘Quilty’s’ delicate smoke. Like all of our lagers, ‘Innocent Until Proven Quilty’ was spunded and naturally carbonated, lending the tiniest of bubbles and dense foam. We’re finding this beer pairs really well with practically any kind of food & should be a refreshing yet complex pick for the warmer days ahead.
