HRÍM is an ice cider made from Rubinstep and Discovery apples, crafted through cryo-concentration to intensify the natural sugars, acidity and aromatic character of the fruit.
The concentrated juice is fermented with an **experimental wine yeast selected by Sandalen gård**, giving the cider a distinctive and individual expression. With around **150 g/L of residual sugar**, HRÍM is richly sweet, yet its concentration and acidity give it remarkable intensity and balance.
The result is a powerful, deeply flavoured ice cider with pronounced apple character, concentrated fruit and a long, lingering finish.
The name **HRÍM** comes from Old Norse. *Hrím* means **frost, rime or hoarfrost** – the fine white layer of ice crystals formed by freezing moisture. The name reflects both the Nordic character of the cider and the freezing process used to concentrate the apple juice.
**HRÍM – concentrated by frost.**
