Twilight Oblivion

In collaboration with Jester King Brewery the concept for our version of Twilight Oblivion was to create a relatively neutral, but rich Baltic Porter base as a canvas for the character of the Mourvèdre Rosé juice that we added to our whirlpool. Blacklands Malt Pale Moon and Munich 15 make up the majority of our grist, along with restrained additions of chocolate, C60, and de-bittered black. Warrior hops were used sparingly for bittering. This past summer, grapes were hand harvested by Jester King and us in Fredericksburg, TX at Wildseed Farms in cooperation with Wedding Oak Winery.
From the inception of this collaboration we wanted to showcase how the exact same grist with grapes from the same vineyard could be expressed in two completely different ways; one being with lager yeast only and Mourvèdre Rosé juice, and the other being allowed to mature after lagering on whole de-stemmed Mourvèdre grapes with Jester Kings mixed culture.
Everybody knows Jester Kings makes excellent beers and is chock-full of amazing people. Perhaps lesser known is that they’ve been vital in improving Texas beer laws over the years that allow us (and many others) to do what we do.
