Citra, Simcoe and Mosaic – where do we even begin? The three hop varietals that made us fall in love with modern beer as we know it, utilised by breweries we’re now lucky enough to call our contemporaries, and that have likewise been the lifeblood that have run through the brewery since we started nearly four years ago during that snowy January in 2018. It seems like our best and brightest have always had these hop varietals fingerprints on them in some guise, so why not make a big celebration of all three in a single beer?
