Double Barrel Aged Stellar

Barleywine aged in a Woodford Double Oak bourbon barrel and then further aged in a Distillery 291 Maple syrup ex rye barrel.

The idea behind DOUBLE BARREL AGED STELLAR came after we released CONSTELLAR in may 2023. That beer was double barrel aged and we were quite stoked over how good the result was, so we really wanted to see how a version of our STELLAR recipe would taste like if it was double barrel aged - and of cause we had to aged in our “childhood” dream maple syrup barrel.

As always with our Syrupwines we split the wort in two and boiled one half for several hours to maximize the Maillard reaction and creating the thickest caramelized malt syrup you can dream of, which has given the beer a smooth and creamy mouthfeel with deep notes of caramel and toffee.
We then aged in a Woodford Double Oak bourbon barrel and tranferred to a freshly emptied maple rye whisky barrel from Distillery 291.

Now we just wonder how a triple barrel version of STELLAR will taste like.

Aged time: 12 months in a small format Woodford Double Oak bourbon barrel and 4 months in small format Distillery 291 Maple syrup ex rye barrel.
