Your American Brewmaster lived, studied, trained and brewed in Berlin.
He is a true fan of the traditional Berliner Weisse exemplified by the
Schultheiss brand (now extinct). We don’t add hops so the Lactobacillus
can create the mouth-puckering tartness and some wonderful fruity esters,
the Saccharomyces drives down the sweetness and some Brettanomyces
round out the flavor profile. True to the traditional style, this is made with
