It’s always exciting to be offered the opportunity to brew with one of the old school family brewers, especially when it is the one which you believe to be the most forward thinking and progressive in the UK. Adnam’s history dates back to 1872 and both ourselves and their head brewer Fergus wanted to look back through the years of brewing tradition to create this beer.
Both Fergus and our head of production, Colin, hail from Ireland so we felt it appropriate to look back at the history of the country’s most famous dark beverage which eventually led us to a recipe from 1888; a recipe based on a foreign extra stout, to loosely form the basis of this beer.
We decided on a slightly lower ABV of 6% as we wanted to aim for drinkability and through doing so, the recipe eventually arrived at a beer which resembled that of an export porter more so. However, in order to still reflect the mix of both modern and historic, we added some new world hops in the form of Simcoe, Mosaic, and Chinook BBC to the old world stout recipe to create a beer with extra depth and complexity.
