Timeless - Wild ale aged on oak barrels for 25 months.

Ageing is a process that consumes time. One of life's great paradoxes is found here: we lose time as we get older, yet the older we get the more time we store inside of us. We feel immortal at the age of eighteen, basking in the reassurance of a seemingly endless supply of years to come. Then at the age of eighty, when our younger selves imagined our time to be almost up, this spirited eighteen-year-old is still a part of us, along with all the other ages we have been. We collect them and we are all of them. We become ageless as we age, timeless as time runs out. This paradox is our redemption.

Timeless is our second collab with White Stork Beer Co, a turbid mashed beer with Bulgarian Limets (a type of grain) blended with an amber rye saison and a golden sour. The taste is rich and complex due to its long ageing of 25 months on French oak barrels. Notes of yellow fruit like pear and peach are layered with funky aromas from aged hops and wild yeast.
The mouthfeel is creamy and full as a result of the turbid mashing and the Limets grain.
