Sumar

Sumar – Mythologys 2nd mead, is an Elderflower mead. With a name from the warm part of the year, made from Nordic summer/early autumn honey, it has a strong floral character, with a heavy overtone of elderflowers.

These elderflowers we picked by the meadery, with no stems.

A floral mead like this requires special attention to bring out nor only the acidic elderflower flavours, but also the more natural flavours. They aimed to also get flavours of the greens, a tad of bitterness in the back of the flavour pallet, so they treated the flavour extraction as a tea.
