Wild Ale with brettanomyces, matured in white wine barrels. Fullbodied, semi-sweet and with low carbonation. Interesting and complex now, but is likely to age well and develop over time.
This beer had its primary fermentation in our oak foeder with belgian yeast, before being transfered to different white wine barrels with a blend of brettanomyces strains for a 13 month long secondary fermentation and maturation. Blended and matured in steel tank for further maturation. Show Less
