Gourmantine's Bread Kvass

The original light beer! Kvass (Cyrillic spelling "KBAC") is a Russian/East-European beer-like beverage of very low alcohol traditionally made using stale rye bread, bread yeast, no hops, and various flavorings such as honey, raisins, mint, lemon, spices, etc. It is consumed very fresh within a few days or weeks. Each household would keep their own favorite recipe. The traditional homemade beverage is nothing like the brown raisiny commercial stuff made from malt extract that you might find at stores. The real stuff is light and refreshing... literally liquid bread! Some like it tart, and due to lack of hops or preservatives it does go tart with age. This version has gooseberry leaves.
