Belgian-style witbier with black lime and cardamom.
Our witbiers are our own field for neat experiments with classics. This time, instead of the traditional coriander, we used our favorite cardamom, but decided to replace orange peel with something very interesting. Black lime is a rather unusual spice common in Persian cuisine, and we made them ourselves this time. These limes are completely dried in the hot sun (in a wood-fired home brick stove in our case), and add wonderful smell of fermented citrus to our witbier, a drop of smoked flavour, and together with a refreshing and resinous cardamom they create a wonderful drink for sure.
