The story of Dutch speculaas cookies began in the ‘spice’ islands – once the only source of exotic ingredients like nutmeg. Back in Amsterdam, then the centre of spice trade, bakers created secret mixes using clove, cinnamon, nutmeg and ginger to make luxurious cookies known as speculaas. These were given as gifts in winter, a tradition that Lowlanders still follow, exchanging initials in the form of cookies, chocolate – or now in bottles of spiced Winter Ale. Show Less
