ホップの香り成分チオールをフル活用した香り高いIPA3部作｢豪傑｣の第1弾はMega MotuekaのTDHIPA。いろとりどりで取り上げたMotuekaにMega(超)がついただけあり、主役のMotuekaのアロマが溢れるような爆発的な特長に合わせドカンと大きく造りあげました。ベースにゴールデンプロミスを使用。口当たりとボディを出すため大量の小麦フレークを加え、Motuekaをマッシュに投入し糖化プロセスで発生する酵素を利用してホップに含まれる結合型香りチオールが解放されます。更に煮沸終盤にMotuekaを再び投入して柑橘系フレーバーと穏やかな苦味をプラス。そして、シリーズのテーマであるMega的な要素が本格的に現れるのは煮沸後のワールプール工程から。Mega Motuekaを中心にチオールの香りを際立たせることで知られるサザンクロス等通常の2倍以上のホップを投入し、たっぷりのファンタズムを加えます。ファンタズムはソーヴィニヨン･ブランの皮を粉末にしたものでチオールが豊富に含まれます。また、それに適した特殊酵母がこの大量のチオールを3MHや3MHAと呼ばれる香りチオールに変換。結果、パッションフルーツやグレープフルーツのようなシトラス系の香り、目が覚めるような弾けるトロピカルなホップフレーバーをビールに与えてくれるのです。まさかMegaはここで終わらず、発酵中にもバイオトランスフォーメーションを狙い更にMega Motuekaを投入、より多くのチオールを解放することでヘイジーで柔らか、そして底抜けにホッピーな味わいを実現しました。程よくドライなフィニッシュでMotuekaのトロピカル香が怒涛の如く溢れるこのIPAは全ホップ好きに送る超が付く究極のビールといえるでしょう！ Show Less
