飲食店やビアバーのお客さまからのアンケート結果をもとに、食事との相性に焦点をあてたビールシリーズ｢紡｣の第二弾。異なるビールスタイルに合うと思う食材や調理法を伺い、その情報からコンセプトを決定し、さらに私たち京都醸造らしいエッセンスも投入することで、期待、納得、そして驚きを提供できる楽しいシリーズに発展してきました。今回のスタイルは｢ペールエール｣。それも、”魚のフライにぴったりあう””はきはきした”ペールエールというお題をアンケートからもらいました。魚を使った天ぷらやフライは国内においてはごくごく一般的なものですが、特にビールを飲みつつ楽しむ魚料理としては、フィッシュアンドチップスが有名ですね。カリっと揚がった厚めの衣をまとった白身魚にポテトフライが添えられたこの料理は、目を見張るような賑やかさはないものの、衣に加えられたビールの風味が美味しく、ビールとの相性はピカイチで。今回のレシピでは、麦芽は極力ライトで淡いものを選び、さらにお米のフレークを加えました。それによって、キレとドライな口当たりが生まれ、特に油を使った料理を口にするときにバランスを感じられる仕上がりを狙いました。さらにホップのブレンドとモロッコ産のコリアンダーからは、ほのかに柑橘、特にレモンのようなニュアンスを感じられる仕掛けです。フレッシュなレモンをぎゅっと絞って食べるフィッシュアンドチップスとの相性にここまで特化したペールエールはきっと、このビールぐらいでしょう。さぁ召し上がれ。

名前の由来:冬が終わると、結んでいた手のひらを開くように、春が訪れ、植物が一斉に芽吹きはじめる。モノトーンだった世界に彩りが舞い戻り、伸びよう伸びようとする迷いのない生命のパワーを感じられるのもこの季節ならではの風景。 Show Less
