In 1841, the City of Pilsen (Czech Republic) hired Bavarian Braumeister Joseph Grollto to brew a pale lager. This brew became known as "Pilsner" after its birthplace and is the most copied style in the world today.
Because only beer brewed in Pilsen can be called Pilsner (i.e. Champagne only comes from the Champagne region of France), we call our beer "Pils."
