Huddle & Cling: 100% Brett Amber W/Buckwheat

Brettanomyces is from a family of yeast that can produce flavors different from traditional brewer’s yeast. For this 100% Brett fermented Amber, we used our house Brett blend with a complex malt bill (including 16% toasted buckwheat), as well as Huell Melon hops for honeydew & berry flavors. The Brett adds white wine, pineapple, earthy, and tangy flavors, while a modest dose of plum purée lends additional fruit complexity.
