The Finer Points of Bad Behavior Volume VII: Peaches And Brettanomyces Bruxellensis

Volume VII revisits our original pairing of ripe peaches from Mick Klug Farms and a strain of Brettanomyces Bruxellensis known for its characteristics similar to white wine like Chenin Blanc and Pinot Gris. This time around we allowed for much longer contact time with the peaches and extended conditioning once bottles. This extended process time yields a beer that has more depth and complexity to its funkiness while remaining delicate and allows for a subtle, quenching acidity to emerge. Show Less
