Dark Schöps

Originating in the Prussian city of Breslau in the 1300’s, Schöps were ales brewed with dominating proportions of wheat, and exuding a strong bready, malt character, with a mild, nutty sweetness and presenting as highly drinkable. Our interpretation of this historic style was brewed in collaboration with our friends at Heirloom Rustic ales, and focuses on the dark variant of this near extinct beer. We used over 60% German origin wheat malt, and added a kiss of Oklahoma Gallagher Wheat to pay tribute to the home of our co-conspirators, then cap sparged with dark malts to attain an exceptionally smooth roasted character and finished with an old cask strain of yeast.
