A wild sour ale with Brettanomyces aged in white wine barrels with blackberry puree.
Funky, wild ale notes with blackberry flavors and subtle wine-like, oak aftertaste. This is closest to a flanders red in flavors and complexity but with fruits added. This 2 year long project involved a Saison base for this beer, a long fermentation with brettanomyces and pediococcus and an aging for 6 months in white wine barrels with fruit purees added.
