Bruts aren't empty, at least ours isn't! After trying a few Brut IPAs and finding them decidedly empty tasting (Hop LaCroix anyone?) we wanted a Brut that was light and crisp like the style with big hop character and aroma, and something else to carry the beer across the palate from start to finish, filling in the void we found in the middle of many Bruts. So after our Brewmaster made what he swears has to be the driest beer he has ever brewed, we added local, organic pears and fresh bay leaf for a secondary fermentation. The result is surprisingly bright, herbal, crisp, and deceptively drinkable for an 8.5% beer!
