Consonance & Dissonance: Corot Noir

Corot Noir, like its name sake Pinot, is capable of making wonderfully balanced deep red wines with bright fruit character. Once again, we worked with our family at Blue Heron Vineyard in South Windsor to select the variety and target the ideal picking window for our use. A carefully assembled multi-year blend of spontaneous beer was transferred onto the fruit just after harvest in September 2021 and given time for a complete refermentation. We then transferred the beer back to a 750L oak cask to rest for another 5 months before bottling on March 22, 2022. Show Less
